Honey Spice Cookie Recipe
I was on a ginger cookie kick for quite awhile. My oldest daughter, Mallory, wasn’t such a fan of them. She thought they were too spicy.
One day she came home from school and I had already started making my go-to ginger cookies. She was less than impressed with my choice and asked me to make a different cookie. Since I’d already mixed some of the ingredients together I went with the same recipe but changed up a few of the ingredients to make them a whole new breed of deliciousness. This new recipe, the ginger cookies, and my chocolate chip cookies are now my go-to cookie recipes. I should probably branch out but they are just too tasty.
The original ginger cookie recipe comes from my mama’s recipe book. This is my alternate version. I call them honey spice cookies. They have a delicious flavor and are super soft like good cookies should be.
HONEY SPICE COOKIES
- 2 1/4 cups flour
- 1.5 tsp. pumpkin pie spice
- 1 tsp. baking soda
- 3/4 tsp. cinnamon
- 1/2 tsp. cloves
- 1/4 tsp. salt
- 3/4 cup butter
- 1 cup sugar
- 1 egg
- 1/4 cup honey
Combine first six dry ingredients, mix well, and set aside. In a large mixing bowl, cream the butter and sugar together. Add the egg and honey. Incorporate dry ingredients and mix until combined. Roll into balls and bake on an ungreased cookie sheet at 350 degrees for 8 minutes.
This is a cookie the whole family digs. My son proudly announced at the end of the day that he’d consumed six of them himself. Guess I better keep a better eye on him next time, that little rascal.
